  • 1 bag Tostitos Rolls!™ Tortilla Chips
  • 2 pkg plain brick‑style cream cheese, at room temperature
  • 2 cups shredded Cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped red onion
  • 1 tbsp Tex‑Mex seasoning blend
  • 1 tbsp Worcestershire sauce
  • 2/3 cup chopped toasted pecans
  • 2 black olives (optional)

How to make it:

  1. Using electric mixer, beat together cream cheese, Cheddar cheese, bacon, red pepper, onion, Tex‑Mex seasoning and Worcestershire sauce.
  2. Refrigerate for about 2 hours or until firm.
  3. Form into football shape, with flat bottom, to resemble a porcupine; roll in chopped pecans.
  4. Transfer to serving platter.
  5. Add olives (if using) to one end of cheese ball to resemble porcupine eyes.
  6. Stud body of cheese ball all over with tortilla rolls to resemble porcupine quills.
  7. Serve immediately with remaining tortilla rolls.

Tip: For a spicy cheese ball, substitute jalapeno for red pepper. Use your favourite Cheddar cheese – try smoked, aged or mild.

Tip: To make ahead, wrap and refrigerate cheese ball for up to 6 hours. Let stand at room temperature for 30 minutes before serving; stud with tortilla rolls just before serving.
